Here’s a little breakfast hack I’m loving right now. I first grabbed the Kale & Quinoa Cakes from Wegmans on one of those busy mornings when I needed something quick but still wanted it to feel healthy. They were delicious, light, filling, and a nice change from the usual.

While scrolling through their website over the weekend, I discovered that Wegmans actually shares the recipe for the very same cakes. 🙌🏾 You know I had to try it. Now, instead of buying the pre-made version, I make a big batch myself and freeze them!

I used the King Arthur Hamburger Bun and Mini Pie pan (affiliate link) to create the round shape. This is my go-to pan. It’s perfect for everyday baking!
